Refried Beans from Scratch

Ingredients

  • 1.00 lb Dried Pinto Beans (Rinsed) Pinto Beans
  • 8.00 cup Water (For cooking)
  • 1.00 Each Yellow Onion (Chopped)
  • 2.00 tbsp Extra Virgin Olive Oil (For sautéing)
  • 1.00 tsp Cumin (Ground)
  • 2.00 tsp Salt (Or to taste)

Instructions

  1. Place the pinto beans and 8 cups of water in a large pot. Bring to a boil, reduce heat, and simmer gently for 1.5 to 2 hours, or until the beans are very tender.
  2. Drain the beans, reserving the cooking liquid.
  3. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until softened and translucent, about 5 minutes.
  4. Add the cooked beans, cumin, and salt to the skillet. Cook for 5 minutes, stirring occasionally.
  5. Using a potato masher or the back of a spoon, mash the beans, adding reserved cooking liquid 1/4 cup at a time until the desired creamy consistency is reached.
  6. Serve hot.
