Brandywine Tomato Consommé

  • 3.00 lb Brandywine Tomatoes (Ripe, roughly chopped) Brandywine To...
  • 1.00 tsp Lemon Juice (Freshly squeezed)
  • 4.00 Each Fresh Basil (Leaves, roughly chopped (for flavor, removed later)) Sweet Basil
  • 0.50 tsp Salt (Or to taste)

Instructions

  1. In a large bowl, combine the roughly chopped Brandywine tomatoes, lemon juice, basil leaves, and salt. Mix gently.
  2. Transfer the mixture to a food processor and pulse briefly until chunky, but not puréed.
  3. Line a fine-mesh sieve with cheesecloth (or a coffee filter) and set it over a bowl. Pour the tomato mixture into the sieve.
  4. Cover and refrigerate for at least 8 hours, or preferably overnight. DO NOT press the solids, as this will cloud the liquid.
  5. Discard the solids and chill the resulting clear tomato liquid (consommé) until ready to serve. Serve cold, optionally garnished with a basil ribbon.
