Brandywine Tomato Consommé

- 1.00 tsp Lemon Juice (Freshly squeezed)
- 4.00 Each Fresh Basil (Leaves, roughly chopped (for flavor, removed later)) Sweet Basil
- 0.50 tsp Salt (Or to taste)
Instructions
- In a large bowl, combine the roughly chopped Brandywine tomatoes, lemon juice, basil leaves, and salt. Mix gently.
- Transfer the mixture to a food processor and pulse briefly until chunky, but not puréed.
- Line a fine-mesh sieve with cheesecloth (or a coffee filter) and set it over a bowl. Pour the tomato mixture into the sieve.
- Cover and refrigerate for at least 8 hours, or preferably overnight. DO NOT press the solids, as this will cloud the liquid.
- Discard the solids and chill the resulting clear tomato liquid (consommé) until ready to serve. Serve cold, optionally garnished with a basil ribbon.
