Authentic Thai Chili Sauce

- 0.50 cup Granulated Sugar
- 0.50 cup White Vinegar
- 2.00 tbsp Water
- 0.50 tsp Salt
- 1.00 tbsp Lime Juice (Freshly squeezed)
Instructions
- In a small food processor, pulse the chili peppers and garlic until finely chopped. Do not over-process into a paste.
- In a small saucepan, combine the sugar, white vinegar, water, and salt. Bring to a boil over medium heat, stirring until the sugar and salt dissolve.
- Reduce the heat to a simmer. Add the chili and garlic mixture. Simmer for 10-15 minutes, or until the sauce has thickened slightly.
- Remove from heat and stir in the fresh lime juice. Let the sauce cool completely before transferring to an airtight jar.
- The sauce will thicken further as it cools. Store in the refrigerator.
